About the winery After World War II in the 1950s, poverty was rife among farmers in southern Italy. At that time, grandfather Angelo Paradiso, one of many farmers in Puglia, decided to seek refuge in viticulture and built the winery Cantine Paradiso in 1954. Today, Cantine Paradiso is a winery particularly known for its generous, red wines made from grape varieties such as Primitivo, Negroamaro and Nero di Troia.
Vineyard and region The grapes are planted in vineyards with soils high in limestone and clay. Primitivo grapes are picked in early September and Nero di Troia grapes in early October.
Vinification After destemming, the grapes are crushed and first soak in stainless steel tanks at a controlled temperature. Fermentation then begins and the temperature is kept controlled at 26-27 degrees. After fermentation, the grapes are pressed. The juice then stays in stainless steel tanks for 12 months, after which the blend is made. The wine then matures in bottle for another 3 months before going on the market.
Colour Deep ruby red with purple reflections.
Scent Plums, cherries, rosemary, mint and nutmeg.
Palate Lots of pure fruit with a firm structure and good freshness. Mediterranean herbs and spices.
Serve with Delicious with fennel sausages from the barbecue.
