About the winery After World War II in the 1950s, poverty was rife among farmers in southern Italy. At that time, grandfather Angelo Paradiso, one of many farmers in Puglia, decided to seek refuge in viticulture and built the winery Cantine Paradiso in 1954. Today, Cantine Paradiso is a winery particularly known for its generous, red wines made from grape varieties such as Primitivo, Negroamaro and Nero di Troia.
Vineyard and region The grapes are picked in early to mid-October in the vineyards around Cerignola. The grapes are then very ripe and highly concentrated in flavour.
Vinification After destemming, the grapes are crushed and soak for 10-15 days in stainless steel tanks at a controlled temperature. During that process, the grape juice is constantly pumped over the grape pulp floating upwards, extracting extra flavour. The wine is then pressed. The wine remains in stainless steel tanks for 2 months, before being transferred to medium-oaked French Allier oak barrels. In these, the wine matures for 12 months. The wine then matures in bottle for another year before going on the market.
Colour Deep ruby red with purple reflections.
Scent Plums, cherries, black pepper, nutmeg and eucalyptus.
Palate Deeply fruity with notes of blackberries and plums. Full and powerful with a pleasant backbone of tannins.
Serve with Delicious with game stew or venison steak.
