About the winery After the Second World War in the 1950s, there was a lot of poverty among farmers in southern Italy. Grandfather Angelo Paradiso, one of the many farmers in Puglia, decided at that time to seek refuge in viticulture and built the Cantine Paradiso winery in 1954. Today Cantine Paradiso is a winery, particularly known for its generous red wines, made from grape varieties such as Primitivo, Negroamaro and Nero di Troia.
Vineyard and region From several vineyards around Cerignola in Apulia. The soil consists of clay and lime.
Vinification After harvesting, the grapes are destemmed and fermented. The fermentation plus skin maceration takes place in stainless steel tanks at a controlled temperature of 15 to 20 degrees for 15 and 20 days. The wine matures for two months in stainless steel tanks, followed by a wood aging of 12 months in barriques. After the wood aging, the wine goes back to the stainless steel tanks for three months. Before being marketed, the wine ages in the bottle for another four months.
Color ruby red.
Fragrance Red berries, prunes, myrtle, cloves.
Taste Full of flavour, tannins present but well integrated, lots of dark fruit (plums, myrtle, berries) and impressions of spices.
Serve with Delicious with pasta with rich sauces. Also delicious with a pizza with spicy salami.
